Don't drink your smoothies! Slow down, sit down and eat your smoothie in a bowl with lots of colorful, tasty toppings (chocolate chips don't count, but cocoa nibs would be great). This smoothie is like eating a pumpkin pudding, but with less sugar and more fuel for you bod.
Pumpkin Smoothie
2 servings
*Tip: chill cans of coconut and pumpkin overnight for a cold smoothie
1/2 fresh or frozen banana
1/2 cup pumpkin puree
1/2 cup coconut milk
1/3 cup raw oats
1 or 2 TBSP nut butter
1/8 to 1/4 tsp pumpkin spice or cinnamon
1/2 lemon squeezed
Blend until very smooth in a high-powered blender.
Second day, your smoothie will be the consistency of a delicious pudding!
***Top with pumpkin seeds of course, shredded coconut, pomegranate seeds, grapes, chia seeds or cocoa nibs
